Executive Chef - The Local

The Carolina Hurricanes bought Backyard Bistro in January 2024. The restaurant across the street from PNC Arena is under renovation and will soon reopen as The Local, with a new elevated sports bar menu. The Local will be hiring an Executive Chef to launch the new brand.


The Executive Chef will be responsible for overseeing the kitchen operations, including menu and catering execution, food preparation, quality control, and kitchen staff management.


Key Responsibilities:

Menu Development and Execution:

  • Modify and innovate dishes from the created menu to suit customer preferences and dietary needs.
  • Ensure seasonal and locally sourced ingredients are used.
  • Oversee daily food preparation and cooking activities.
  • Ensure dishes are prepared and presented according to established standards.
  • Maintain high levels of food quality and consistency.


Kitchen Operations:

  • Supervise kitchen staff, including chefs, cooks, and other kitchen workers.
  • Organize and direct the kitchen team to ensure efficient operation.
  • Schedule on site and off site catering shifts and manage staff.
  • Coordinate hiring of new employees


Catering:

  • Coordinate with Catering Director with off and on premise events.
  • Assign team and vehicles to BEO.
  • Develop lists for prep, set up, execution, breakdown & return instructions.


Inventory and Cost Control:

  • Manage inventory of food supplies, kitchen equipment, and incoming orders.
  • Monitor food costs and implement measures to minimize waste and control expenses.
  • Negotiate with suppliers to secure the best prices and quality.


Health and Safety Compliance:

  • Ensure the kitchen complies with health and safety regulations.
  • Maintain hygiene standards and ensure food safety practices are followed.
  • Conduct regular inspections and implement corrective actions as necessary.


Staff Training and Development:

  • Train and mentor kitchen staff, promoting a positive work environment.
  • Develop opening and closing duties for all areas including position descriptions based on events.
  • Conduct performance evaluations and provide feedback.


Qualifications:

  • Proven experience as an Executive Chef or in a similar role.
  • Culinary degree or relevant certification preferred.
  • In-depth knowledge of various cooking methods, ingredients, and kitchen equipment.
  • Strong leadership and communication skills.
  • Ability to manage a budget and control costs.
  • Excellent organizational and time management skills.
  • Must have valid NC driver's license
  • Must pass criminal background check and have acceptable driving record
