Deputy Catering Manager

  • To support and deputise for General Catering Manger as required.
  • To ensure the business is operated in an effective and profitable manner.
  • To oversee the match day and event activity and ensure customer service is of an excellent standard.

Reports to: General Catering Manager

KEY RESPONSIBILITIES

  • To support and manage the delivery of matchday catering operations
  • To support the implementation of operational plans for all catering services across all sites that support wider functions and increase income generation for the Club.
  • Provision of an excellent customer experience at all matches and events.
  • The co-ordination and communication of catering activity in all function rooms during matches and events.
  • To ensure the provision of high-quality standards in all corporate areas of the stadium for the service of food and drink.
  • Support the 1st Team and Development Squad with home and away match boxes.
  • Ensuring catering staff have all the required training and information and that they are properly motivated and able to achieve the required level of service for each event.
  • Supporting the development of packages for food and drink which enhance the experience and create opportunities for income growth.
  • Compliance with food safety, HACCP and licensing legislation and all club policies and regulations governing the provision of a safe environment.
  • Ensuring that financial targets are met, and costs are controlled in line with budgets.
  • To ensure that systems are used effectively to enable the smooth process for all payments and billing on match days and during any event.
  • To ensure that catering spaces are well maintained and that any repairs to spaces or equipment are done in a manner that avoids disruption to services.

Health & Safety:

Line Manager requirements:

  • Maintain up to date knowledge of Health & Safety legislation and ensure compliance with the Club’s Health & Safety Policy and all relevant regulations.
  • Maintain up to date knowledge of Licensing legislation and ensure compliance with the Club’s Policy and all relevant regulations.
  • Maintain up to date knowledge of food safety legislation and ensure compliance with the Club’s Policy and all relevant regulations, including the regulations surrounding dietary requirements and allergens.
  • Support the requirements of the Food safety regulations and specifically lead the collation of all necessary due diligence legislation.
  • Consider the Health & Safety implications of all operations within your area of responsibility.
  • Support and uphold agreed standards for Health & Safety compliance, including assisting in accident, dangerous occurrence and near miss investigations within your area of responsibility.
  • Direct the adherence to, and implementation of safe management systems in line with legislation and Club policy within your area of responsibility.
  • Carry out induction briefings to direct reports and where applicable induct any workers/volunteers/contractors/visitors etc when entering the premises.
  • Carry out safety briefings to all staff regarding, urgent safety information, general safety information and any changes to Club policies or procedures.
  • Regularly conduct and review risk assessments, safe working, and management systems
  • Lead any Health & Safety training needs and ensure that all training is completed by your direct reports.
  • Manage and monitor the performance of subcontractors, suppliers, and partners, etc and make appropriate Health & Safety recommendations for performance improvement.
  • Liaise regularly with the Club’s appointed Health & Safety representatives to support and maintain compliance.
  • Maintain records of all Health & Safety issues within your area of responsibility.

MAIN JOB REQUIREMENTS AND PERSON SPECIFICATION

Education/Qualifications/Training:

  • Qualifications to GCSE or A-level standard that include mathematics.
  • Microsoft Office skills including extensive knowledge of Excel, Outlook etc.
  • H&S training to a level commensurate with work activity
  • Food safety training to a level commensurate with work activity.
  • NCPLH Qualification.
  • FSA Allergen Management Training

Specific Experience:

  • Background in Stadium Hospitality of Conference Centre catering activity.
  • At least 3 years in a management role in an organisation where catering hospitality is a core function.
  • Experience managing a team of at least 15 staff.
  • Ability to work with minimum supervision.
  • Specific track record for the successful development of staff and teams.
  • Able to demonstrate the ability to build turnover and meet targets.
  • Can demonstrate a commitment to excellent customer service and methods of achieving it.
  • Excellent verbal and written communication skills.
  • Ability to prioritise tasks and to delegate them when appropriate.
  • Ability to function well in a high-paced environment.

  • High standard of personal presentation.
  • Understanding the importance of health and hygiene
  • Passionate about food, drink, service, and hospitality industry
  • Highly developed problem-solving skills, resilience, and the ability to perform well under pressure.
