Position Summary:
This position supports the Executive Performance Chef and the Performance Nutrition team in implementing the UFC Performance Institute Fight Week culinary program.
Responsibilities:
Prepares fight week meals to support athletes at the various stages of fight week, per the standards and nutrient programming of the Performance Nutrition team.
Abides by food handling safety standards, including temperature controls, sanitation standards, food storage and dating, and documentation of safe handling.
Establishes and maintains allergen and religious avoidance labeling standards and maintains alternative recipes and menus to support athletes with food limitations.
Creates Fight Week and post-weigh-in recipes and menus in line with the Performance Nutrition team's programming.
Supports the recipe and nutrient analysis while integrating within nutrition analysis software to provide detailed nutrition and allergen information.
Collaborates with the Performance Nutrition team to develop culinary related nutrition education content and materials; this may include written video and streaming content, as well as in-person education.
Supports all Las Vegas-based events; supports non-local events as assigned.
As necessary, manages third-party assistant chefs to provide consistent food quality for athletes.
Provides feedback to Executive Performance Chef and Director, Nutrition.
Supports Executive Performance Chef with kitchen access coordination, food procurement and storage, and recipe development and nutrition education for athletes.
Ensures that kitchen operations comply with Department of Health, OSHA, and Zuffa's standards.
Assists Director of Nutrition in evaluating and overseeing the job performance of culinary team members.
Other duties as assigned.
Skills & Experience:
High school diploma or GED. Culinary degree preferred.
Five years of culinary experience. Two years’ experience in fine dining is preferred.
Must have a current Clark County Health Card.
Ability to communicate effectively, orally and in writing with individuals in all levels of the organization, but particularly with members of the highest level of the organization.
Comprehensive food knowledge, which includes cost control, menu planning, budgeting, training, inventory control and sanitation.
Must be able to travel and handle a flexible schedule.
Must demonstrate sound judgment and mature decision-making ability, even in difficult situations.
Must possess and demonstrate great attention to detail in order to maintain expected appearance and operating standards.
Customer-service driven.
Must possess the ability to work hands on in any kitchen environment pertaining to a three-meal period in fine dining, butchering, baking soups, stocks, sauces, roasting, sautéing, broiling, grilling and cold food production.
Ability to maintain discretion and confidential information.
Average level skills with Microsoft Excel, Word and Outlook and ability to learn other computer software programs.
