The Position

Calgary Sports and Entertainment Corporation’s Food Services Department is seeking a Chef de Partie. As a Chef de Partie you will report to the culinary management team, and will be responsible for tasks that focus on the day to day activities in the kitchen. Performing as lead cook in the kitchen, assist Sous Chef’s and Chef’s in all areas of the kitchen including food production waste control, standards and kitchen sanitation. The ideal candidate will have 5+ years working in a hotel/restaurant, with a strong knowledge of kitchen operation. In addition you will have Journeyman/Red Seal Certification

Key Accountabilities

  • Station operation, serving and preparing products in accordance to specifications or delegation to tasks of the Chef’s;

  • Oversee the daily operations, production and preparation of culinary items, ensures area(s) is operational at opening time/service time;

  • Ensure that all production required is up to date prior to days off and that a task list is left for the next shift;

  • Opens and closes kitchen shifts and ensures completion of assigned duties;

  • Takes an active role in the production of new menus and Menu Features;

  • Supervises associates to ensure that guest service, operational needs and financial objectives are met;

  • Good communication skills (verbal, listening, writing);

  • Knowledge of governmental regulations and safety standards ( MSDS);

  • Adhere to all company policies and programs as required;

  • Compliance with all safety regulations of assigned tasks, and ensure a clean and safe working environment;

  • Other duties as assigned.

Shifts are event driven and consist of mainly evenings and weekends. Flexible availability is required.

Full-time hours.
